Avocado Cucumber Smish-Smash (fast, easy, raw vegan recipe)

I enjoyed this on Sunday as a part raw-part cooked recipe (I had it twice it was so good). It's insanely delicious and refreshing. Normally, when I make it as an all-raw recipe, I use 1/2 cup cucumber and I eat it as a small (yet hearty) salad (as the recipe below details). But, on Sunday, I wanted to stretch it into two servings and put it on a toasted (sprouted) english muffin, so I used the whole cucumber.

Avocado is so nutritious. Filled with fat? Hell yes... the good fats! But, that's not all. When you gobble up avocado, you're also giving your body vitamins B6, C, and K, fiber, folate, potassium, and copper. It's creamy, delicious, and one of my favorites.

Cucumber rocks also! They're super hydrating and have vitamin C (plus more). I have had a lot of cucumbers while pregnant (fresh cucumber juice served on the rocks was a big craving of mine).

Avocado Cucumber Smish-Smash

Yield 1 serving

1 avocado, pitted, peeled, and diced
1/2 cup cucumber, peeled and diced
1 teaspoon raw coconut vinegar*
1 teaspoon raw coconut aminos*
dash onion powder

Place everything in a medium bowl and smish-smash it (I like using a potato masher for this).


Serving suggestions:
~ You can eat this by the fork for a wonderful, nutritious, and hearty salad
~ Scoop it into large leaves of romaine lettuce and top with chopped tomato and/or bell pepper
~ Dip corn chips into it (raw or baked, it’s up to you!)
~ Or, enjoy it as I did on Sunday (pictured above). I used a whole (peeled) cucumber in the recipe, and I scooped it onto toasted organic english muffins (the picture shows one serving, and by using a whole cucumber, I stretched it into two servings so I used two whole english muffins - it was my snack two different times)

  6. That looks good. Recently I've been on a big guacamole kick, using cabbage leaves as the nacho chips. I never would have thougth to use cucumber. I will be trying this one tonight. Thanks!

    That looks delicious!

    I heard some sad news yesterday and it made me think about your post about the dairy farm with the abuse caught on tape. Someone hung a female 1 yr old pitbull in the early hours of the morning yesterday, in a playground in Philadelphia. I know it (abuse in general) happens more than we'd like to think, and that it probably didn't make more than the local news, but it really struck me. What kind of monster does that....

  11. YUM! I'm thinking you could also mix the seasonings with just the avocado (and maybe tomato and red pepper), cut a cucumber in half lengthwise, hollow out the seeds, and serve the avocado mix in the hollowed-out cucumber. I'm trying this for lunch today! Thanks, Kristen! :-)

  13. I don't normally peel them but there are two reasons I will, if I do:

    1) in this recipe I'm doing some "mashing" and the peels would make that harder.

    Or 2) sometimes they taste too bitter

  14. That looks awesome! I have some ezekial english muffins in the freezer but have been waiting for something amazing to have with them. During pregnancy I loved avacados on creamcheese on bagels. Too bad I wasn't vegan then, but now that I (almost) am avacados are wonderful. Of course when I bring them to work my coworkers tell me they are too fattening and/or they've never tried one fresh. My kids love them, too, but they weren't available in the grocery store when I was growing up. I tell people it's good fat, but usually they've read some article saying they are terrible for cholesterol. I also read an article in Fitness magazine at the Drs office and was happy to see it explain the goodness of avacados until the end when it said you should only eat 1/4 to 1/2 an avacado a day and not every day. BS!!!

    You can use organic lemon juice, lime juice, or apple cider vinegar in place of the vinegar.

    If you need a replacement for the aminos, you can use tamari. The aminos have a bit of earthy salt flavoring, so if you don't want aminos or tamari, salt-n-pepper will be fine (not exactly the same, but still fresh n delish!).

  19. I have tried going raw a couple of times and right now and mostly vegan. I seem to get very bloated on raw and have trouble is that normal?

  23. Kristen, this is a great recipe. I made it this weekend and had it for dinner on Ezekiel toast. I didn't have the coconut ingredients, but I made do with a lemon and a little bit of braggs!
