Raw Vegan Recipe: Zippy Energy Soup

Here is a wonderfully simple... bursting with fresh and gentle flavors... delicious zippy punch... Raw Vegan Soup! This recipe is filled with superior nutrition including fiber, antioxidants, minerals, and vitamins. For example, there's avocado which is not only rich in texture, but also rich in nutrients. It’s filled with a whopping 9 grams of dietary fiber (sometimes more!), plus B-vitamins, including folic acid – making this an excellent choice for pregnant ladies.

Zippy Energy Soup
By Kristen Suzanne of KristensRaw.com
Yield 3 cups

2/3 cup water
1/3 cup fresh orange juice
2 cups kale
1 cup celery, chopped
1 cup romaine lettuce, chopped
1 cup red bell pepper, chopped
1/2 avocado pitted and peeled
1 tablespoon Garlic Red Pepper Miso*
1 teaspoon fresh orange zest
3/4 - 1 teaspoon wasabi powder

Blend everything together until creamy and enjoy a zippy day!

* South River Miso is the BEST miso on the planet. It's organic and they even offer soy-free varieties, like the one used in this soup. You can substitute with any flavor miso, but Garlic Red Pepper is so very much especially nice. Last year I bought a mixture of about 10 jars of their various miso from them. They basically last forever so I stock up and take advantage of their 10% discount on orders $100 or more.

  2. YUM! I love how you use romaine a lot. Some ppl discount it because it isn't super dark like spinach. But it's such a great veggie!

Wonderful post. I wish I had that zippy soup right now!!

  4. I finally received my order from South River Miso. I will have to try this soup. Does it taste better a little warmed in the vitamix? Its so cold here right now! Hope you and the little one and hubby are feeling terrific Kristin!

  5. Sure, blend til a little warm. Miso itself has warming properties so that's nice.

Plus, drink the miso plain in warm/hot cup if water... Feel the warmth from head to toe!

  10. Yeah, blogger is buggy sometimes. I get the spacing issue among other things from time to time.

    Mmmm...wasabi...

And I'll have to check out South River miso. Haven't seen that brand but now, I'll be on the lookout. :)

  15. Good to know! I never know what kind of Miso to buy :-) Once you open Miso how long on average would you say it will last in the fridge??

  16. Hhhmmm..... I've had opened jars for many months. They say it lasts pretty much forever, although I'm not sure if that's once it's opened. Good question. I'll try to find out.

    Hi Gena,
I left out garlic and had you in mind - lol!

  23. I just confirmed with South River Miso about the expiration dates of their miso. They wrote to me saying, "Whether opened or not, our miso will keep indefinitely - years and years and years..."

  24. Kristen, would miso be a good thing to sub for soy products in various recipes? We are soy free, so I've always skipped the soy-containing recipes in your cookbooks.

    ReplyDelete
  25. The miso is for flavoring and salt, and this company makes soy free varieties if you're interested (most miso is soy). What are you referring to in my books? I don't have much soy... the only time is with tamari and miso (of which both are fermented soy). You can substitute salt in both cases, a smaller amount of course. Or with soy-free miso.

  26. I just got your dehydrator cookbook. It must be the crackers I'm thinking of? I don't have it in front of me.

I haven't tried fermented soy on my son. He can't do soy protein, but seems to tolerate small amounts of soy oil & lecithin. I have wheat-free tamari. I should bite the bullet & just try it!

    ReplyDelete
  27. Many people tolerate fermented soy better than plain soy but allergies aren't something to mess with (especially kids). On the tamari bottle there should be a conversion for how much salt to replace it with that you can use as a guideline. :)
