Here is a wonderfully simple... bursting with fresh and gentle flavors... delicious zippy punch... Raw Vegan Soup! This recipe is filled with superior nutrition including fiber, antioxidants, minerals, and vitamins. For example, there's avocado which is not only rich in texture, but also rich in nutrients. It’s filled with a whopping 9 grams of dietary fiber (sometimes more!), plus B-vitamins, including folic acid – making this an excellent choice for pregnant ladies.
Zippy Energy Soup
Yield 3 cups
2/3 cup water
1/3 cup fresh orange juice
2 cups kale
1 cup celery, chopped
1 cup romaine lettuce, chopped
1 cup red bell pepper, chopped
1/2 avocado pitted and peeled
1 tablespoon Garlic Red Pepper Miso*
1 teaspoon fresh orange zest
3/4 - 1 teaspoon wasabi powder
* South River Miso is the BEST miso on the planet. It's organic and they even offer soy-free varieties, like the one used in this soup. You can substitute with any flavor miso, but Garlic Red Pepper is so very much especially nice. Last year I bought a mixture of about 10 jars of their various miso from them. They basically last forever so I stock up and take advantage of their 10% discount on orders $100 or more.

ReplyDeleteHhhmmm..... I've had opened jars for many months. They say it lasts pretty much forever, although I'm not sure if that's once it's opened. Good question. I'll try to find out.

ReplyDeleteI just confirmed with South River Miso about the expiration dates of their miso. They wrote to me saying, "Whether opened or not, our miso will keep indefinitely - years and years and years..."
ReplyDeleteKristen, would miso be a good thing to sub for soy products in various recipes? We are soy free, so I've always skipped the soy-containing recipes in your cookbooks.
ReplyDeleteThe miso is for flavoring and salt, and this company makes soy free varieties if you're interested (most miso is soy). What are you referring to in my books? I don't have much soy... the only time is with tamari and miso (of which both are fermented soy). You can substitute salt in both cases, a smaller amount of course. Or with soy-free miso.

ReplyDeleteI haven't tried fermented soy on my son. He can't do soy protein, but seems to tolerate small amounts of soy oil & lecithin. I have wheat-free tamari. I should bite the bullet & just try it!
Many people tolerate fermented soy better than plain soy but allergies aren't something to mess with (especially kids). On the tamari bottle there should be a conversion for how much salt to replace it with that you can use as a guideline. :)
