It's not really tofu. There is no soy. It's a mock tofu made of cashews and irish moss (and maybe some seasoning, etc).

Have you used organic raw agave nectar? That's lower glycemic index than honey.

There is another sweetner out there (not raw) that I haven't tried that you might consider. I don't remember the name of it (birch or something). But! If you google "the ultimate meal" (that's a protein shake)... Well, that company also has a natural sweetner you can buy. So, once you're on the website, search around for it.

question- can you suggest a natural sweetner other than stevia( it upsets my stomach) I drink a lot of tea and don't want to over do the honey

My folks and I were actually going to go to Quintessence last year when we were in NYC, but we cancelled our reservations and went to Pure Food and Wine for a THIRD time on that trip, haha ;-)
