Raw Vegan Recipe: Exotic Chocolate Milk

It's time for a recipe! YAY! Here is a delicious, sassy, and unique recipe that is creamy and nutritious (ginger and hemp seeds rock!). This recipe is featured in my latest book, Kristen Suzanne's Ultimate Raw Vegan Chocolate Recipes. And, the lovely Ingrid (of Raw Epicurean) also featured this on her blog with a picture.

EXOTIC CHOCOLATE MILK

By Kristen Suzanne of KristensRaw.com

Yield 3 cups

Ginger is a rich source of powerful antioxidants, which have anti-inflammatory properties, and there is evidence that ginger's antioxidants might help fight/inhibit the growth of certain types of cancers. Not only that, studies show ginger can also help boost the immune system.

Hemp is commonly referred to as a "superfood" because of its amazing nutritional value. Its amino acid profile dominates with the 8 essential amino acids (10 if you're elderly or a baby), making it a vegetarian source of "complete" protein! And, it's loaded with essential fatty acids in an ideal ratio of omega 3s to omega 6s. Go hemp!

2 cups water

1 cup hemp seeds

1/4 cup raw chocolate powder

2 tablespoons raw agave nectar or date paste (or more)

1 1/2 teaspoons orange blossom water*

1 teaspoon fresh grated ginger (or more)

pinch Himalayan crystal salt (optional)

Blend all of the ingredients until smooth and creamy. Exotic Chocolate Milk will stay fresh when stored in an airtight container for up to five days.

* Available at most Middle Eastern Markets, online, and at some Whole Foods Markets.

Hi Kristen! I've just recently discovered your blog, as I have been searching for quality content relating to my recent move away from a mostly meat diet to one that includes more fruits and vegetables. Thanks for your valuable content! I noticed in this recipe you call for an optional pinch of Himalayan Crystal Salt and you've linked it to Amazon. Have you ever tried Dr. Barbara Hendel's Crystal Salt? Yes, this is partly shameless plug for a product we sell at Swanson Vitamins, but I'm also curious to hear your honest opinion on Crystal Salt in general. I have a tub at home, but haven't tried it yet. Do you use it a lot? Just in the kitchen or for sole too?

Thanks for stopping by my blog!
What a creative recipe. Sounds delicious. As an uncreative cook, posts like these are what give me my meal (and in this case beverage) ideas. :-)

Hi Michelle,

Can you have other nuts or seeds? Cashews, pecans, walnuts will work, as will sunflower seeds, etc. Or, Brazil nuts... I'd probably soak any of those for at least a few hours.

Cheers,
Kristen

Thanks for posting this Kristen - I really appreciate all of the freebies you post for us to keep us motivated and trying new things - YAH! And chocolate - i seriously can't live without:) Quick question - i sometimes see date paste listed as an ingredient - where do i buy this (i've looked to no avail) or how do i make it? I always have dates but just not sure of what to do - many thanks!!

Hi El,
I posted this recipe on my blog post about agave nectar.

DATE PASTE
By Kristen Suzanne of KristensRaw.com
Yield 1 cup

15 Medjool dates, soaked 15 minutes (reserve soak water)
1/4 - 1/2 cup reserved “soak water”

Using a blender, or a food processor, fitted with the “S” blade, puree the ingredients until you have a smooth paste. You can add a pinch of Himalayan crystal salt, if desired. Stored in an airtight container in the refrigerator (glass mason jar is perfect), Date Paste will stay fresh for 10-14 days or longer.

Cheers,
Kristen
