Hempin' Around Chia Pudding

Yield 3 cups
3 cups Creamy Dreamy Hemp Milk*
4 Medjool dates, pitted (or more)
2 tablespoons lucuma powder
1 teaspoon cinnamon
1/2 - 3/4 teaspoon almond extract
1/2 cup chia seeds
1/2 cup shredded coconut, dried and unsweetened
Blend the Creamy Dreamy Hemp Milk along with the dates, lucuma, cinnamon, and almond extract until creamy. Place the chia seeds and coconut into a bowl and add the blended hemp milk mixture. Stir thoroughly and wait a couple of minutes. Stir again and wait another couple of minutes. Stir again. At this point you can eat it or place it in the refrigerator until you're ready to serve it. Hempin' Around Chia Pudding will stay fresh in an airtight container in your refrigerator for up to five days.
* I made my Creamy Dreamy Hemp Milk with dates. The dates listed in this recipe are in addition to the dates already included in the hemp milk.

As soon as I can get out of here and get my hands on some almond extract, I will try this!
Question - the hemp seeds that I bought are shelled, but there are still a handful of shells floating around the seeds. This is annoying if I try to eat them plain (crunching on the occasional shell), but is this bad for blending, meaning, if I have the shells in my milk, etc. will it hurt at all? I guess I can strain the milk, then. Do Manitoba's hemp seeds usually have a few shells left in the bag?

My husband and I eat them all the time straight out of the Manitoba Harvest bag and don't have much of a problem with shells. Every once in a while we bite into one, but it's not a toothcracker for us, ya know? We just spit it out.
Regarding blending it? I never strain hemp milk or other recipes. I just blend away when making cheese or milk or hemp butter, etc.
So, you might have better luck with Manitoba Harvest, but know that you'll still bite into one from time to time.

Thanks for the reminder I have chia seeds waiting to be made into pudding! This time of year I get a lot more into raw foods so thanks for all the good tips and ideas.

Thanks, Kristen - I will try the Manitoba next time. The ones I have are from the UK and there are far too many shells! They settle at the bottom of the milk after blending, where they all gang up together and form a silt-like brown, gritty, powdery substance.

Whoo hoo! Glad you liked it. I have to admit, I love the Holiday Chia Pudding more than the Hempin' Around Chia Pudding, but it's still wonderful :) and I love the nutrition from the hemp seeds! :)

I am such a boring raw vegan. I just eat salads and fruits... I never liked to cook when I wasn't vegan, but I think my taste buds would be happy if I gave this whole "cooking" thing a go!
