Raw Vegan Recipe Book - CHOCOLATE - Now Available

Announcement time! My latest book is now available, Kristen Suzanne's Ultimate Raw Vegan Chocolate Recipes. (The ebook is not available yet; it should be this week.) If you'd like to view some pictures of featured recipes in the book, go here. As with all of my books, the pictures are not in the book. To keep the cost of the books as low as possible, I have pictures posted on my website.

This book is the ultimate introduction to chocolate in its most pure, natural form by using raw, dark chocolate (also called "raw cacao nibs"), raw chocolate powder, raw cacao butter, and raw cacao liquor. These are my favorite chocolate-based recipes -- both sweet and savory.

Chocolate Chia Crackers

Yield 1 tray (quantity depends on size you cut)


1 cup
chia seeds
2 cups water

Juice of 1 orange

1 apple, cored & chopped

1/4 cup
raw chocolate powder
2 tablespoons raw agave nectar

6 dates, pitted

dash
Himalayan crystal salt

Soak your chia seeds for 30 minutes in a large bowl with 1 1/2 cups of the water.
Blend the remaining ingredients (including the remaining 1/2 cup of water) together. Add the blended mixture to the bowl with soaked chia seeds and stir to mix. Break up any chia seed clumps with your rubber spatula or spoon. Let the mixture sit (as is) for 15-30 minutes.

Spread the mixture on a
dehydrator tray lined with a non-stick Paraflexx sheet and score to desired size. (For a thinner cracker, divide between two trays.) Dehydrate at 135 degrees for 60 minutes. Reduce the temperature to 105 degrees and dehydrate another 6-8 hours. Flip crackers onto another tray without a Paraflexx sheet and peel off the Paraflexx sheet being used. Dehydrate another 6-10 hours, or until you reach your desired dryness.

these sound great, but I have a question...if you DH or heat anything up higher than 115/118 degrees, does this not kill off all the enzymes and goodness within the ingredients??? just curious. Thanks for sharing the recipe....def gonna try it today

Ooh la la, sounds delish! I have been adding raw cacao and carob powder to all my desserts lately - avocado and coconut puddings and dessert balls. Yum!
Congrats on the book release Kristen. Sounds fab!

Kristen, so many of the recipes call for a dehydrator or any expensive equipment? I am keen to purchase your book for a gift for a chocolate loving friend, but she is not into raw or even healthy eating so I don't want to get it for her if it is time intensive or you need lots of equipment. Appreciate your feedback!

Hi Loulou,

Great question!

It's often recommended that during the first hour of dehydrating you crank the heat to 130-140 to help prevent any mold or bacteria from growing (this is the recommendation from Excalibur).

There is no destruction of nutrients because, while the air around the food is 130-140, the temperature of the actual food is not, because it "sweats" (which cools it off). After an hour or so, you drop the temp to 105-115.

HI Casey,
Only a handful (4) of the recipes use a dehydrator. Most of the others use things like: blender and/or food processor. A couple of them you can just mix in a bowl.

Most of my books are like this, exception is the dehydrating book - ha ha.

Obviously, you can sub the delicious carob into the recipes :) Would be super yummy :) I'm a fan of raw carob - such a nice earthy sweet flavor. hhhmmmm Okay, I have to go order some now! haha!

4 of the recipes (crackers, nuts, seeds, and a plant leather require a dehydrator) but the rest don't. :)
