Calling all Raw Vegan Chocolate lovers! Are you ready for a super fun trio of recipes? Get out your dehydrator because my Chocolate Chia Crackers are BIG fun. Need a snack for your kid's lunch box? Want something super healthy to munch on while watching this week's VP debates? Then, look no further because this is it! I wrote in a past post that Chia is a dieter's dream food. And, raw chocolate mixed in... HELLO! YUM!What? Don't have a dehydrator yet? Why not??? Having a dehydrator is such a fun addition to your Raw Vegan kitchen because it adds tremendous variety to your diet as well as shelf life to some of your food. Now you can have crunchy foods, warm foods, marinated foods with a texture reminiscent of cooked food, and foods that can last a long time in your refrigerator or freezer. Need I say more? Okay, back to this wonderful trio of Raw Vegan recipes. Here you go! Enjoy!!!
Chocolate Chia Crackers
Yield 1 tray (quantity depends on size you cut)
1 cup chia seeds (get them here)
2 cups water
Juice of 1 orange
1 apple, cored & chopped
1/4 cup raw chocolate powder (Navitas is my all-time favorite brand)
2 tablespoons raw agave nectar
6 dates, pitted
dash Himalayan crystal salt
Soak your chia seeds for 30 minutes in a large bowl with 1 1/2 cups of the water. Blend the remaining ingredients (including the remaining 1/2 cup of water) together. Add the blended mixture to the bowl with soaked chia seeds and stir to mix. Break up any chia seed clumps with your rubber spatula or spoon. Let the mixture sit (as is) for 15-30 minutes.
Spread the mixture on a dehydrator tray lined with a non-stick paraflex sheet and score to desired size. (For a thinner cracker, divide between two trays.) Dehydrate at 135 degrees for 60 minutes. Reduce the temperature to 105 degrees and dehydrate another 6-8 hours. Flip crackers onto another tray without a paraflex sheet and peel off the paraflex sheet being used. Dehydrate another 6-10 hours, or until you reach your desired dryness.
Chocolate Hazelnut Butter Spread
Yield 1 1/4 cups
1 1/2 cups hazelnuts
3 tablespoons raw chocolate powder
1 1/2 tablespoons agave nectar
1/2 cup cashews
2 tablespoons extra virgin coconut oil
pinch Himalayan crystal salt
Process all of the ingredients in a food processor, fitted with the “S” blade, until creamy. That's it! Easy!
Sweet Southern Peach Jam
Yield 1 cup
1 cup frozen peaches, thawed
3 dates, pitted, soaked 20 minutes, drained
1 tablespoon raw agave nectar
Blend all of the ingredients together. Voila, Sweet Southern Peach Jam!

Hi Kristen, these recipes look awesome, I have some chocolate bread ready and can't wait to try the spreads.
I have a question for you, do you find that your Breville juicer juices leafy greens and hard veggies like beets and carrots well enough? I have been looking into juicers but I keep finding comments that the Breville will not work as well on those types of veggies, I am also really wary of the plastic components, especially since juice can be very acidic and that is supposed to increase leaching out BPA. any advice?

I'm not concerned about the plastic container for the juicer. Goodness, if I were, I'd have to stop using my blender, food processor, and dehydrator too (depending on what I'm making), I suppose. I'd be left with just cutting food ;) The Breville I have is super for hard veggies like carrots and beets and I also juice celery, cucumbers, zucchini, kale, swiss chard, spinach, etc. Yes, the Green Star juices the produce better, but, as I wrote in my post about juicers, the Breville enables me to juice more on a regular basis.

FYI: These crackers are more cracker/bread-like, not cookie-like, so, purposely, they're not real sweet. They have a super fun texture and are extra terrific with the spreads.

Hi Kristen--I really love your site, especially the emphasis on fitness (I'm a runner) and you're so positive! I have a question about dehydrators--are they really loud? I'm thinking of getting the 9-tray excalibur, but I don't know if I'll be able to put it in the kitchen if it's really loud while it's going. I could put it in my pantry, but I don't know if I should do that--would it block the air flow to be in a closed area like that?

The Excalibur 9-tray dehydrator has a nice soft "hum" to it. It's not loud or problematic at all in my opinion. You could probably get away with putting it in a closet so long as the closet was sizable and walk-in style. And, make sure there is some space available around it. It will heat up the closet though, keep that in mind.
I have mine sitting right on top of my dryer in my laundry room. My mom keeps hers in her dining room and when there's company, she puts it away. Some people keep it in the kitchen, office, patio outside, etc.

Well, I'm one of those holding out on a dehydrator, but am anxious to get one after looking at these chocolate recipes! I'm working into eating high amounts of raw, after feeling the incredible energy everybody talks about when I have my green smoothies every morning. I just made one (at my husband's request - maybe he'll come around) for our evening meal. and OUI....I really, totally love raw chocolate - can't imagine consuming chocolate that has been processed ever again. Thanks especially for these recipes and the inspiration in your blogs - I hope to help spread the raw message to all in my little pharmaceutical and family spheres!
